El Diablo began with a simple dream: to bring authentic Mexican flavors and the best tacos in Fort Collins to our community.
On October 4, 2021, we opened our very first food truck, Tacos El Diablo. With hard work, dedication, and a passion for great food, we quickly became a local favorite. Our goal was never just to serve tacos—it was to create an experience that reminded people of the authentic flavors, traditions, and hospitality of Mexico.
The support from our customers allowed us to grow beyond our expectations. Just two years later, we proudly opened our first brick-and-mortar location, El Diablo Mexican Restaurant.
Today, El Diablo is more than a restaurant. It is a family-owned business built on tradition, quality, and community. We continue to prepare our dishes with fresh ingredients, authentic recipes, and the same passion that inspired us on day one.
From our food truck to our restaurant, our mission remains the same: to serve delicious Mexican food, create memorable experiences, and make every guest feel like family.
